Melon Ginger Granita

Chill with our refreshing Melon Ginger Granita recipe—bursting with the sweet essence of juicy melons in every icy bite!

Ingredients

½ Piel de Sapo melon, rind & seeds removed
250 ml ginger ale 
Fresh mint, to garnish (optional)
Crystalised ginger, finely chopped, to garnish (optional)

Directions

Cut the melon into large chunks then blend in a food processor to a purée.

Pour the melon into a large freezer-safe dish. Add the ginger ale and stir to mix.

Cover the dish then freeze until mixture is half frozen, about 30 minutes. (The larger and shallower your dish, the quicker it will freeze.)

Remove from the freezer and use a fork to scrape and break up the ice. Cover the dish and return to the freezer to freeze fully.

When ready to serve, scrape and fluff up the ice with a fork then dish into serving bowls.

Garnish with fresh mint leaves and crystallised ginger pieces.
