1Cut the melon into large chunks then blend in a food processor to a purée.
2Pour the melon into a large freezer-safe dish.
3Add the ginger ale and stir to mix.
4Cover the dish then freeze until mixture is half frozen, about 30 minutes. (The larger and shallower your dish, the quicker it will freeze.)
5Remove from the freezer and use a fork to scrape and break up the ice. Cover the dish and return to the freezer to freeze fully. When ready to serve, scrape and fluff up the ice with a fork then dish into serving bowls. Garnish with fresh mint leaves and crystallised ginger pieces.
