1Preheat the oven to 180°C / 160°C fan assisted.

2Brush the slices of baguette with olive oil then bake for 15-20 minutes until golden and crisp.

3Sprinkle a bit of Gruyere cheese onto each toasted slice then return to the oven and bake until the cheese has melted.

4Arrange 3-4 slices of strawberry on each crostini then finish off with a sprinkling of a few fresh thyme leaves. Enjoy while still warm.

8 Slices of day-old baguette

Olive oil

2 Handfuls of grated Gruyere cheese

6-8 Strawberries, sliced

1 Spring fresh thyme
