Blueberry Granola Parfait

1Preheat your oven to 160 degrees Celsius and lightly grease a baking sheet.

2In a large bowl, whisk the honey, oil, molasses, and vanilla together. In a separate bowl add the oats, pumpkin seeds, ginger, cinnamon, nutmeg, cloves, and salt together. Add both mixtures together and stir until it is well combined. Then spread the mixture onto the baking sheet.

3Bake the mixture in the oven for approximately 25 minutes or until it is golden brown, ensure that you stir the mixture every 10 minutes.

4Once finished baking, transfer the granola to a bowl or dish to cool completely.

5To serve, layer the yoghurt, granola, and blueberries in a glass.



200 g Keelings blueberries

980 g low-fat vanilla yogurt


115 g honey

55 g canola oil

2 tbsp molasses

1/2 tsp vanilla extract

280 g oats

130 g pumpkin seeds

3/4 tsp ground ginger

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/8 tsp ground cloves

1/8 tsp salt
