
Mixed Berry Star Bars

These fun shaped take on cereal bars are gluten and refined sugar-free, using bananas, a selection of Keeling’s berries and a little honey or maple syrup for sweetness. They are lactose-free and suitable for vegans too. This is a great recipe to get the kids involved with helping. They will especially love stamping out the star shapes. Use any shaped cutters you like.
Makes 8 stars, plus trimmings

Directions
1Preheat the oven to 180C (fan 160C), 350F, Gas Mark 4. Line a shallow 17cm square cake tin with baking parchment and set aside.
2Peel the bananas and mash in a large bowl. Add the oil or butter, almonds, chia seeds, honey or syrup and cinnamon or ginger, and mix them together well. Add the oats and berries and gently stir until well mixed.
3Spoon into the prepared tin and spread it level. Bake for 20-25 minutes until just firm to the touch and evenly golden brown. Remove and leave to cool completely.
4Using a star-shaped cutter (measuring about 7cm from tip to tip), stamp out eight shapes and arrange on a serving plate or cake stand. Don’t waste the trimmings (see tip below)! The stars and trimmings will keep in an airtight container in the fridge for a few days.
5TIPS The trimmings are ideal to serve crumbled onto yoghurt and with Keeling’s berries as a breakfast or dessert option. Or simply eat straight from the storage container!
6Swap the nuts for other seeds like pumpkin or sunflower if preferred or necessary because of a nut allergy.
